Why are the ibidi Collagens Type I non-pepsinized?

Usually collagen is extracted from the tissue using pepsin, because it is a fast and cheap method. However, because pepsin digests collagen telopeptides, the ability for collagen to create cross-links is reduced. ibidi Collagen Type I, Rat Tail or Bovine are not extracted using pepsin, in order to preserve their natural cross-linking ability as much as possible, and to ensure a more native, or in vivo-like, state.
